“Creamy Keto Pound Cake” with V1 SMOOTHIE
What we adore about this Creamy Keto Cream Cheese Pound Cake with V1 Smoothie recipe is that it bakes up incredibly moist and soft. The texture is velvet-like with the perfect soft, golden “crisp” on the outside.
- 4 oz cream cheese at room temperature
- 4 tablespoons soft butter
- ½ cup Truvia
- 1 tsp almond extract
- 4 eggs
- ¼ cup sour cream
- 2 cups almond flour
- 2 teaspoons baking powder
- 2 scoops of V1 SMOOTHIE
Preheat oven to 350 degrees
Grease a 6-cup bundt pan and set aside
In a large mixing bowl, beat together the butter, cream cheese, and Truvia until light and fluffy. Make sure to beat well!
Add almond extract and mix well.
Add the eggs and sour cream and mix well.
Add all the dry ingredients (almond flour, V1 Smoothie and baking powder). until well combined. Beat the mixture until it is light and fluffy.
Pour the batter into the greased bundt pan.
Bake for 40 minutes until a toothpick inserted to the bottom of it comes clean.
Make sure to beat mixture very well!
